Dear friends of Westville & All Sevens Brewing,
Eight years ago, Westville Pub embarked on a daring adventure when we began crafting our own beer. We opened All Sevens Brewing with the vision of bringing you local, unpretentious, but well rounded brews–and we’ve enjoyed every step of the way.
After eight wonderful years of brewing, pouring, and raising a glass with you, we’ve made the difficult but heartfelt decision to say goodbye to brewing our All Sevens beers. But don’t worry, we’re not done with brewing entirely and we’re looking forward to sharing some of our creative ideas down the road. Our taproom and brewery bar will still be open to serve you and to accommodate large parties on the daily, as per usual.
Thank you for all of the love and continuing support you’ve shown for All Sevens Brewing and stay tuned for exciting new products and collaborations to come! In the meantime, come and grab an All Sevens pint while they last. Cheers!

meet our brewer
Dirk Hillegass, Head Brewer
Dirk Hillegass was born and raised in southern Pennsylvania. After receiving an Associates of Applied Science Degree from Allegany College of Maryland he continued his education in biological studies, successfully completing his B.A. at WVU in Forestry and Wildlife Fisheries. After moving to the Asheville area, he quickly became involved in the field of fermentation science. A biologist at heart, he worked with Dr. Caldwell at Carolina Heritage Winery and Vineyard. He served as a long standing Brewer for Highland, and is now currently Head Brewer at All Sevens Brewing Company.
